Mary's Favorite Potato Soup Recipe! Kentucky Kernel Flour is the Secret Ingredient!


In case you haven’t noticed there is a theme going on at the Treehouse this week-- “Soup”. Delicious homemade mouthwatering soup! Warmth in your belly kind of goodness. What is it about soup that nurses a cold or makes you feel loved? I don’t know, but I sure think it is a magic elixir. Thank you all for sending in your recipes. I must say it has been fun receiving all of them. For those of you that are just tuning in today we are collecting soup recipes and posting the top 5 on November 15th with the recipe and a link to your blog. There is still time to get in on the action--don’t delay.

I must share with you a recipe that was given to me in the grocery store last Saturday. I was standing in the isle at the market looking over dried beans when a woman walked up with a sparkle in her eyes and snow-white hair. She said, “your gonna make soup! Am I right?” She said she was a snowbird getting ready to head to Florida for the winter and loved making soups then proceeded to give me her favorite potato soup recipe. Let me just say, that has never happened before. I was delighted by Mary’s southern hospitality and here is the recipe for all of you to enjoy. The secret ingredient is Kentucky Kernel Flour. Serves four.

Mary’s Potato Soup

Ingredients:

5 potatoes any type (peeled and diced)
1 T of olive oil
1 small onion (chopped)
4 slices of bacon
Salt and pepper to taste
1 cup of whole milk
¼ cup of flour (Kentucky Kernel Brand) The secret ingredient!
¼ cup of shredded cheddar cheese
1 dollop of sour cream added to each bowl.

Directions:
Boil potatoes for about 15 minutes. Sauté onion in olive oil. In a separate pan fry 4 slices of bacon then remove from pan. Using same pan make gravy with flour and milk then add onions, drained potatoes, salt and pepper. Ladle into bowls then add crumbled bacon, cheese, and sour cream. May use more milk to thin out soup if needed.

Sounds delicious. I will definately have to try this one, maybe on Christmas Eve. I love cooking with KY Kernel Flour. Great for making pork chops and gravy. etc.
