Tomato Casserole

What do you do with beautiful tomatoes like these? You make a tomato sandwich—yum! Just take two slices of bread and spread a little Hellman's mayo and top with sliced tomatoes then add salt and pepper. OMGness these are so good. That is my favorite way to eat tomatoes, however my family luvvvvs Tomato Casserole. It is super easy and delicious.

This recipe does not have specific amounts. Use your own discretion. First layer: sliced fresh tomatoes. Second layer: sliced onions separated into rings. Third layer: sliced Swiss cheese. Sprinkle with Parmesan cheese and Italian breadcrumbs. Repeat first, second and third layers until you have the desired amount. Top the casserole with breadcrumbs that have been mixed with melted butter. Bake at 350 degrees for 45 minutes.

The beautiful tomatoes you see in the photo are compliments of my dear Uncle Gerald—fresh from his garden. Here is a photo of him standing in front of his garden. Love Ya Uncle G. Enjoy!
